The default shortcuts assume key combinations that are too common in other apps.
I had to set them to very hard to hit combinations because there’s no way to disable a shortcut at all.
The default way in other apps that let you customize key combos is, you click on the combination button and if you hit delete, that hotkey is blank (not delete, which is the silly default behavior in Amie)
